Cracker Barrel Meatloaf (Copycat)

Cooking Time: 1 hour
Total Time: 1 hour, 15 minutes
Servings: 8 servings
Ingredients
1 tablespoon olive oil
½ cup yellow onion, finely diced
1/2 cup bell pepper, finely diced
3 eggs
1 1/2 sleeves of crushed Ritz crackers
1 cup sharp cheddar cheese, freshly shredded
1/2 cup whole milk
1 tsp. salt
1/4 tsp. black pepper
2 pounds 80% lean ground beef 
Meatloaf Glaze
½ cup ketchup
2 tbsp. brown sugar
1 tsp. yellow mustard
Directions
    Preheat oven 350 degrees F.
   Heat the oil in a skillet over medium heat, add the diced onion and pepper  and cook until softened. This will make the vegetables more tender and flavorful.
In a large bowl, combine the eggs, crushed Ritz crackers, cheese, milk, onion, bell pepper, salt and black pepper. Mix well. 
   Add in the ground beef. Mix well just to combine. Do not over mix. Form into a loaf and place loaf pan lined with parchment paper. Bake in preheated oven for 30 minutes. 
   While loaf is baking, make the glaze. In a small bowl, combine the ketchup, brown sugar and mustard and mix well. Set aside.
   Remove loaf from oven and spread glaze over the top. Return loaf to the oven and bake for an additional 30 minutes or until meatloaf is cooked through with an internal temperature at the center of 160 degrees F.
    Remove from the oven and let the meatloaf rest for 10 minutes before slicing.
NOTES:
Use freshly shredded cheese. Pre-shredded cheese contains anti-caking ingredients that absorbs the moisture in the meatloaf.
