Crockpot Rotisserie Chicken

Ingredients
2 onions, peeled and sliced
4-6 pound whole chicken
2 tablespoons olive oil
1/2 teaspoon paprika
1 teaspoon Italian seasoning
1/4 teaspoon garlic powder
1 teaspoon salt
1 teaspoon pepper
Directions
Place onions on the bottom of the crockpot. Then place the chicken in the crockpot, breast side up. Rub the olive oil all over the skin of the chicken with a basting brush.
In a small bowl, mix together the paprika, Italian seasoning, garlic powder, salt, and pepper. Sprinkle the mixture on the chicken and brush the seasonings all over the skin of the chicken.
Cover and cook on LOW 4-6 hours, or cook on HIGH for 2-3 hours or until the chicken has reached an internal temperature of 165 degrees F. Carefully remove chicken from crock pot.
Allow the chicken to sit for 5-10 minutes before serving.
Optional for crispy skin: For crispy skin, place the chicken in a baking dish and broil for 4-5 minutes. Make sure to keep an eye on it so it doesn’t burn.
Notes: Chicken leftovers can be refrigerated in an air-tight container for up to 5-7 days.
