Ground Beef Doritos Casserole

Ingredients
1 pound lean ground beef
1 cup yellow onion, diced
1 green bell pepper diced
1/2 cup onion finely diced
1 (8 oz.) package cream cheese
1 (10 oz.) can Rotel tomatoes, drained
1 (14.5 oz.) can whole kernel corns, drained
1 (1 oz.) package taco seasoning
1/2 cup sour cream
2 cups cheddar cheese, shredded
3 cups Nacho Doritos, crushed
optional garnishes – fresh cilantro, diced tomatoes, avocado slices
Directions
Preheat oven to 350°F. Spray a 9×13 inch baking dish with nonstick spray
Cook ground beef, onion and green bell pepper until beef is browned and no pink remains. Drain any fat.
In a large bowl, combine cream cheese, sour cream, and taco seasoning until well mixed. Then add the Rotel and corn. Add the cooked beef and onion. Add 1 cup of the shredded cheddar cheese and mix until well-combined.
Pour the beef mixture into the prepared baking dish and spread evenly out. Cover with aluminum foil and bake for 30 minutes. Uncover and sprinkle with crushed Doritos. Add the remaining cup of cheese and bake for an additional 10-15 minutes or until cheese is melted and starting to brown.
Serve with chopped cilantro, sour cream, or toppings of your choice.
